Fresh leaves from Assam contain 22.2% polyphenols, 17.2% protein, 4.3% caffeine, 27.0% crude fiber, 0.5% starch, 3.5% reducing sugars. Important constituents of leaf buds and very young leaves are: caffeine,with a much smaller amount of other xanthines (theophylline and theobromine); tannins (the main tanninin green tea is (−)-epigallocatechin); flavonoids, quercetin, kaempferol. <ref name="chemical composition"/>
