The obtained extract was shown to contain the following antioxidant metabolites: amaranthine, ascorbic acid, phenolic compounds as well as monosaccharides and disaccharides. Accumulation of these compounds in different amaranth plant organs in the course of the plant growth and development was analyzed.<ref name="chemical composition"/>
